1 lb. Margarine (4 sticks) |
Melt. Cool slightly.
DO NOT use soft/tub, low fat types. |
2 Cups Creamy Peanut Butter
2 lbs. Confectioners Sugar (powdered)
2 Teaspoons Vanilla |
Add to melted butter.
Shape into balls (size of quarter).
Insert toothpick into each ball.
Refrigerate 15 minutes. |
Toothpicks
1/8 lb. Paraffin (optional)
12 oz. Chocolate Chips |
Melt paraffin and chocolate chips over hot
water. Dip balls in chocolate and set on waxed paper.
Makes 115 balls. |

2 lbs. White Chocolate
2 Cups Pretzel sticks, broken
2 Cups Captain Crunch Cereal (Peanut Butter)
2 Cups Rice Krispies
2 Cups Salted Peanuts |
Carefully melt chocolate. Combine remaining
ingredients and add to melted chocolate. Stir thoroughly, but
gently. Drop by tablespoons onto waxed paper. Set till
hardened.
Option: Can also be dropped into Christmas cupcake or candy papers. |

Opera Cream

3 lbs. 10X Sugar (powdered)
3 Teaspoons Vanilla
2 Sticks Butter
8 oz. Cream Cheese
Melted Chocolate |
Mix first 4 ingredients well. Roll into balls and put
in freezer for 1 hour.
Dip in Chocolate. |
Peanut Brittle (Microwave)

1 1/2 Cups Salted Peanuts
1 Cup Sugar
1/2 Cup Light Corn Syrup
Dash of Salt
1 Tablespoon Butter
1 Teaspoon Vanilla
1 Teaspoon Baking Soda |
Mix peanuts, sugar, and syrup in glass bowl. Cook 5-7
minutes on HIGH. Stir in butter and vanilla. Cook 1 minute
longer and add soda... stir quickly until foamy.
Pour immediately onto greased cookie sheets, cool and break into
pieces.
Note: Microwave timing varies upon watts. |
White Chunky Chocolate

Prep Time: 15 |
12 oz. white chocolate morsels
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup roasted, salted peanuts
1/2 cup roasted, salted cashew pieces |
| In a medium, microwavable bowl, melt the white chocolate, stirring
once, for about 45 seconds. Stir in the raisins, dried cranberries,
peanuts and cashews.

| Spoon the mixture into 2 flexible ice cube trays, whacking the trays
ob the counter to remove any air pockets and to level out the mixture. |
Refrigerate until set, about 30 minutes. Flex the trays to remove
the candies.
Wrap in Christmas foil. |
