French-Fried Potato Salad

 

4 cups water
1 16-ounce package frozen French-fried potatoes
1 1/2 teaspoons salt
4 hard cooked eggs, chopped
1/2 cup sliced radish
1/2 cup diced celery
2 tablespoons sliced green onion
2 tablespoons snipped parsley
1 cup mayonnaise or salad dressing
1 tablespoon vinegar
  Makes: 8 servings

1. Pour water into large saucepan; bring to full rolling boil. Carefully drop frozen potatoes into water. Remove from heat immediately; cover and let stand 4 to 5 minutes. Drain potatoes at once; spread on paper toweling. Cut up any large pieces. Sprinkle potatoes with salt; cool.

Blend together remaining ingredients. Add potatoes and toss mixture gently; chill. Garnish with parsley and radish rosettes, if desired.
